Baked Beans with Rice
Ingredients
- 3 cups cooked beans
- ⅔ cup brown rice, washed and soaked for 8-10 hours
- 3 onions, chopped and sprinkled with salt
- 1 tbsp red pepper powder (sweet)
- 1 tsp chilli powder
- 2 tomatoes, cut into small pieces
- Unrefined salt and black pepper to taste
- 2 cups water
- A bunch of basil, chopped
Method
Heat a pan and fry onions until golden. Then add the red pepper powder and chilli powder. Add the rice which has been washed well ahead. Cook for 2-3 minutes, then add the tomatoes, black pepper powder, salt and 2 glasses of water and cook until all the water has been absorbed.
Take the beans in a large baking tray, add the rice, salt to taste and at the end, add the basil. Mix well and bake for about 40 minutes at about 180 °C, in a preheated oven.
