Seaweed Salad
Serves 8
Ingredients
- 2-3 seaweed nori sheets
- 300 g radish, thinly sliced with a peeler into ribbons
- 300 g carrots, thinly sliced with a peeler into ribbons
- 300 g cucumber, thinly sliced with a peeler into ribbons
- 150 g onion, sliced
- 30 g garlic, finely minced
- 2 tsp apple cider vinegar or juice of 1 lime
- 2 tsp unrefined salt
- ½ tsp date paste
- 1 tsp mustard powder
- Black pepper powder to taste
Method
Cut the nori sheets into strips. Place the rest of the ingredients in a bowl and toss gently. Serve the salad garnished with the seaweed strips.
