5th June is World Environment Day. Did you know our health is deeply connected to that of the environment? The high levels of pollution in urban India have resulted in respiratory distress in so many. And with the heat, the huge garbage dumps get ignited and add to the toxicity. The wildfires around the world due to heat waves are adding to the pollution and disease.

More and more people are choosing readymade foods, again packaged in plastic, and even if they bring lunch to work from home, it’s often packaged in single-use plastic. And if that’s not enough, people buy their daily needs in plastic bags every day. Plastic, strewn on roadsides and in the fields, is collected by municipal cleaners everywhere and burnt. This means this toxicity goes into the soil, the groundwater and the air. There is no escape.

While wildlife dies due to plastic pollution, domesticated animals also suffer when they eat from garbage dumps. And humans that eat these animals or their milk also inadvertently ingest the plastic second-hand. It’s no wonder cancers, kidney failure and liver disease are on the rise.

World Environment Day may be 5th June but we must care for our environment every single day.

The prevalence of Alzheimer’s and dementia has risen over the years. This is not due to genetics alone. Lifestyle factors too contribute to such cognitive decline. Capt. Joseph Pinto, a passionate crusader for environmental sustainability, sounds a warning bell about the imminent irreversible damage to our planet and provides the one major solution to mitigate it.

Jackfruit “Chicken” Masala 

We need to save the planet one bite at a time. It’s super easy to make meat and dairy alternatives. Try out this delicious recipe and get surprised.

Ingredients

  • 200 g jackfruit (kathal), chopped into 1” pieces
  • 4 tomatoes
  • ⅓ cup cashew nuts, soaked for 4 hours
  • Unrefined salt to taste
  • 1 onion
  • 2 cloves garlic
  • 1″ pc ginger
  • ½ tsp red chilli powder
  • ½ tsp turmeric (haldi) powder
  • 1 tsp garam masala
  • ½ tbsp kasoori methi (dried fenugreek leaves)

Method

Steam the jackfruit for 15 minutes until tender and steam 1 tomato for about 7 minutes. Keep aside.

Drain and rinse the cashew nuts. Pulse in a grinder, with a small quantity of water, to form a thick, smooth paste. Add salt to this and mix the paste well with the cooked jackfruit. Leave aside for 1 hour to marinate.

In a blender, take 3 tomatoes, 1 onion, ginger and garlic and blend well. Take 3 tbsp water in a wok/kadhai. When it heats up, add this paste to it, bring to a boil and then reduce the heat to low. Keep cooking, ensuring that it does not burn. This will take about 20 – 25 minutes. You will know it is done when the paste is thick, the bottom of the kadhai is shiny and the paste is not sticking to it.

Blend the steamed tomato to a paste and add to the cooked tomato onion gravy. Add chilli, turmeric and garam masala powders at this stage. Add the jackfruit to the gravy, mix and let it cook for 5-10 minutes. Add more water as required, to bring the gravy to the required consistency. Add kasoori methi and take it off the heat.

Serve with Indian breads – ideally naan or kulcha.

Mother Earth needs us to wake up!                     
                  

She is talking to us, the question is – are we listening? Just like the human body, she initially started communicating with us about small issues here and there. We didn’t listen. Then it started getting serious. Pre-covid saw a host of natural disasters. Post-covid, they have become a norm. Literally every second day there is an earthquake somewhere in the world. Climate change is real. We need to wake up!

Animal agriculture or factory farming, the process of growing animals for our food (meat & dairy), is the leading cause of climate change. Surprised? Understand how…

1. Animal population

Do you know that to feed a population of 8 billion humans, we grow about 80 billion animals per annum? We have created a total imbalance with the biomass of domesticated animals being much higher than the human and wildlife population!

2. Land use

These 80 billion animals need a place to stay, food to eat and water to drink. So, space is created through deforestation. Out of the land that we can use, 77% is used for animal agriculture!

3. Negative energy 

Each day about 3 billion animals are slaughtered worldwide, thus releasing the energy of extreme fear, pain and anxiety throughout the world. Could this be the cause of the rising incidence of depression and mental health issues in the world?

4. Water pollution

78% of global ocean and freshwater pollution is caused by animal agriculture. Overfishing has resulted in ocean dead zones where no life can survive.

5. Air pollution

Cattle, sheep and goats emit methane, a gas 25 times warmer than carbon dioxide. And ironically, we are cutting down trees which produce oxygen, to breed 10 times more animals that emit carbon dioxide and need that oxygen!

6. Global greenhouse gas

Contrary to popular belief, the major contributor to the world’s greenhouse gas emissions is not the global transport sector (13%), but animal agriculture (18%)

7. Human starvation

The food that can feed the poor is now being used to feed animals, just so that other humans can eat them or drink their secretions!
