Change is always difficult. When the lockdown started and our offices had to shut down, we were a little flustered. Little did we know, at that time, that this was an opportunity to reach the whole world with our work. Since it became apparent to most people that the only solution to the pandemic was indeed health, we have had more people than ever interested in our work! Since many also had the time to learn something new, we are keeping pace with classes, consultations and free events to help those who want to follow this lifestyle. We have been forced to think out of the box and that has sparked learning and creativity. No more is location or distance an issue. No matter where you are, you can join us. If the timings are inconvenient, we have recordings for many of our programs as well.

Personally, I can carry out my work without travelling. This is a big bonus, because I could not reach everywhere earlier, but now with online programs I can.

I have seen new organic stores and delivery systems open in my area, which means more people are seriously concerned about the effect of chemicals on our health. I have seen less traffic jams on the roads, and the air is cleaner than it has ever been. In a few instances across the world, it was evident that the authorities had actually understood the cause of the pandemic, by closing down meat and wet markets. I do believe that in general people are eating less meat and dairy.

May this pandemic help us all to learn the true force of Nature and what we can all do to protect her, and ourselves.

‘Salads are a blessing!’ says 6.5 year old Unnathi

Environmentalist Kaajal Maheshwari used her time during the lockdown well by spending quality time with her children. Her 6.5 year old daughter now loves to make and have salads!

Creamy Beet Salad  

Pradeep Agrawal’s dish from The SHARAN Salad Revolution has been a hot favourite. It has the sweetness of cashews, spice of mustard and tanginess of lemon. Now it’s up to you – call it a salad or call it chaat!

Ingredients for the Salad:

  • 5 slices steamed unpeeled beetroot
  • 1 tbsp shredded cabbage
  • 1 tbsp grated unpeeled carrot
  • 1 tbsp shredded spinach
  • 1 tsp roasted unpeeled pumpkin seeds
  • 1 tsp chopped spring onion greens
  • 3 cherry tomatoes cut into halves

Ingredients for the Dressing:

  • 1 tbsp cashew paste (soaked cashew ground into paste)
  • ½ tsp mustard sauce
  • ½ tsp lemon juice
  • 1 tbsp chopped capsicum
  • ¼ tsp unrefined salt
  • ¼ tsp black pepper powder

Method:

For the dressing, mix all the ingredients in a bowl. Keep aside.

Assembly of the Salad:

  1. Arrange steamed beetroot slices directly on the serving tray
  2. Apply a layer of dressing on beetroot slices
  3. Add a layer of shredded cabbage, topped by a layer of shredded carrot, sprinkle shredded spinach over that.
  4. Add a layer of dressing again
  5. Garnish with pumpkin seeds, spring onion and cherry tomato
  6. Enjoy the dish

There is a silver lining                                        

The pandemic has drastically changed the lives of almost everyone. Our mind has a natural tendency to gravitate towards the negative, and this causes fear, anxiety, depression and isolation. We think about the huge economic loss, the loss of entertainment and social life and the time lost from schools and colleges. We dread the pressure that the new normal brings of juggling work from home, housework, teaching the kids and entertaining them. Some of us may be stuck in places that are difficult – in another country or in a home where there is disharmony. It looks like there is no way out.

But every cloud has a silver lining and it is important to see both sides of any situation. It can help to look at the positive side of the pandemic. Hopefully, some of the following will resonate with you and make you feel better in these difficult times.

1. We are forced to think about our health 

As Covid-19 can be deadly to those who already have lifestyle diseases, it has made us realise the value of health. And the bonus? We are being forced to cook more for ourselves and so have a choice in what we eat.

2. Family bonding

We often take our family for granted. But now if they are with us, we have more time with them, and if they are far away, we may appreciate them even more. There are those phone calls or family Zoom chats that we never had time for before. And if we have family disharmony, it may be time to acknowledge it and take action rather than turn a blind eye to it.

3. Social issues

We have realised how difficult it is to be physically away from friends and work colleagues. Some people have made the connection with the plight of prisoners or even other species – zoos, circuses, laboratories and factory farms. All species are social creatures and we all need our freedom. Most of us are however fortunate to be connected in some way – phone, social media, and even emails!

4. Environmental positives

There is definitely a positive change in the air quality – a big boon especially to those with respiratory issues

5. Personal growth

Change is always a catalyst for personal growth. We are being forced to readjust and review our values.

6.  Even busier working from home? 

Let’s think positive – let us be grateful for our jobs in these times. If we can fill our minds with gratitude for what is, we will be happy no matter what.

7.  Financial woes? 

Almost everyone is going through tough times on this front. One way to overcome this would be to eliminate what we do not really require. Our needs are truly so little!
