In India the summer has started and it’s promising to be hotter than usual! Having been on a plant based diet for many years now I notice that it’s easier for me to cope with the weather than it used to be. When everyone else is complaining I am just doing my work.

I read a book titled Peace Pilgrim about a woman who walked across USA for peace. She had no luggage only a comb and a toothbrush in her pocket. She washed herself and her clothes in public washrooms and wore those clothes after just wringing them. Because she was campaigning for peace, she had given up violence on her plate too. Although she would be in the South in winter and North in summer, no jackets or extra clothing was needed. If you think about it, animals too manage all the seasons without any clothes. Yet for us it’s difficult. We need ACs in summer and heaters in the winter! When we eat and live in God’s way rather than in man’s way, life becomes easier.

The summers bring the water shortage. Animals too suffer from heat. So please put out a bowl of water for the birds and other animals if you can. I collect all my organic wastes – banana and papaya skins – for cows. They love it! Depending on where you are, you can do it too. They love fresh food. In Goa, I have seen many streets have a tub to collect the organic waste of local houses for the cows. If restaurants did this, perhaps the cows would not be foraging in garbage so much…

Cabbage Rolls

Enjoy this salad with a twist, which can actually even replace a meal. Easy to make and light too, you will feel nourished and satisfied as well!

Ingredients

  • 1 large cabbage

  • 1/2 kg carrots

  • 1/2 kg beetroot

  • 1 large onion, grated

  • 1 grated fresh coconut

  • Salt to taste

  • Ginger chilli paste to taste

Method

Peel off the cabbage leaves one by one, keeping them whole.  Boil water in a large pot. Turn off the heat and dip the leaves in the water and leave them for a few minutes.

Wash and grate the carrots and beets. Mix all these ingredients and add salt and ginger chilli paste to taste.

Flatten the cabbage leaves and cut off any hard stems. Spread the carrot beetroot mixture over the cabbage leaves and roll tightly. Cut into 2 inch pieces and serve.

Serves 10-15

Summers are Great too!

A wise man once proclaimed ‘The beauty of the summer is it’s heat. The beauty of the winter is the cold. The only problem is we wish it to be cold in the summer and warm in the winters!’

Summers are full of goodness for how can Mother Nature go wrong! She ensures that everything is perfect for us. So in summers she serves us watermelons, grapes, oranges, figs, guavas and not to forget the delicious mangoes! Cucumbers, bottle-gourds, ridge-gourds, pumpkins, amaranth leaves and more come from the vegetable kingdom. The sun is brighter most of the day, so that lethargy doesn’t seep in. Beaches for swimming and coconut water for cooling.

Get summer-wise healthy with some tips…

1. Make cool Green Smoothies! – Yes freezing the fruits enhances the tastes of your smoothies to a large extent. You will also be energised!

2. Eat what’s in season – And the real best way of knowing is by buying organic produce as you will only get what’s in season and without the dash of pesticides too!

3. Gardening – Whether you have a green thumb or not, start planting indoors or outdoors. Working with soil is a great way to reconnect with Nature.

4. Swimming – Basically exercise to feel great and burn the fat away!

5. Learn something new – Take up a course, join a club or even get into a hobby. Works great for your mental make-up too!

6. Spend quality time with the family – Yes thats great for health too!

7. Sleep well – If you are active, hydrated and busy throughout the day, you will automatically sleep real well.

8. Drink when thirsty – Your body will tell you when you need water…simply listen!

9. Avoid sun-screens – These are simply chemicals which do more harm, than good. Dress sensibly in cottons, wear summer hats when outdoors, or simply stand under the shade of a tree wherever possible.

10. Get into declutter mode – Cleaning our environment of non-essentials works great for our mental health.
