More and more people want to live and eat healthy these days. Fueling our bodies with the highest quality of food raises our immunity and makes us almost disease proof. After switching to a high quality plant based diet, few crave the animal products that they thought they would miss. Yet I have some heard people who had switched to vegan say, “I felt great as a vegan and my health improved. But after a few years I found myself craving meat and when I started eating it again, it was as if I was on super vitamins”. This and similar statements are common in those who don’t check and supplement their vitamin B12.

Vitamin B12 deficiency can have so many symptoms. I know some doctors who do not even prescribe medicines and start their patients on vitamin B12 injections. After these, they often find that their prescriptions are not needed! Artificial means may be required in our modern life. Never forget to check and supplement vitamin B12.

I was a strict vegetarian from birth, and in the recent years mainly egg free. Two weeks ago, I gave up milk and milk products  (which I used to take in plenty) after watching Dr Nandita Shah’s video on You Tube video.

A week later, I attended Dr. Shah’s seminar, "Reversing Diabetes and Hypertension " in Dubai. I had both diabetes and high blood pressure. With 2, 500 mg metformins daily my random blood sugar averaged 136  mg/dL. I am also on 2 medications for blood pressure with which my readings were around 160/94.

Following the seminar, I completely stopped using oil in any form. After being vegan for 14 days and oil free for 7 days the following changes occurred.

  • My fasting sugar readings are consistently stabilizing around 90-95 mg/dL,  despite taking only 1/2 tablet (instead of my usual 2 tablets).

  • My blood pressure is stable around 131/75.  

  • I systematically monitor and record these readings in order to take the chart to my doctor to taper down my medications. .

​I am a long time yoga and meditation practitioner. It is my firm understanding that all diseases are the shameful reflections of our anti-natural life style. I realized how a "small" abrasion in my food habits derailed my health and how easily I could begin the reversal by correcting these food habits.

Bhindi/ Bhendi/Okra

I hated this vegetable as a child except if it would be fried and made as kurkuri bhindi. But as years have passed I started developing feelings for this all year around available vegetable and now as a vegan I am completely in love with it. So much that it’s at least made once a week. If it’s not made for more than a week my son actually demands for it. Our love for bhindi is now well known too so much that if I ever miss it while placing an order for my organic veggies, the vendor reminds me. This recipe of bhindi comes together very quickly. You can also pre cook the bhindi and assemble the dish just before serving.

If you are not fond of bhindi just replace the bhindi with any other steamed or roasted veggies like eggplant, pumpkin, colourful peppers etc.

BHINDI BHARTA

  • 250gms bhindi, thinly sliced
  • 2 medium size finely chopped onions
  • 1/4 cup grated fresh coconut
  • 4-5 pcs kokum.
  • 2 green chillies
  • few drops lemon
  • 1 tsp grated ginger
  • sea salt to taste.
  • coriander leaves, chopped.

In an iron skillet, add the bhindi and kokum. Mix well. Cover and cook for 10-12 minutes till the bhindi is just cooked and not mushy. Stir in between

Remove in a bowl and let it cool

Add the rest of the ingredients. Mix well

Serve with chapati/bread

Vitamin B-12 – The Power House

Most of us need to be concerned about vitamin B12. Also called ‘Cobalamin’, this soluble vitamin has a key role in the normal functioning of our brain and nervous system, and the formation of red blood cells.

Neither fungi, nor plants or animals are capable of producing vitamin B12. Only bacteria can manufacture this vitamin, as only bacteria have the enzymes needed for its synthesis.

Meat and dairy products contain bacteria because they are decaying substances. However prolonged consumption of meat and dairy can cause the inability to absorb vitamin B12 by the intrinsic cells in the stomach. Our super hygienic lifestyles, microwaves, mobile phone and their towers, and the consumption of alcohol further reduces our B12 levels . These days almost everyone is prone to vitamin B12 deficiency unless they are consuming foods fortified with this vitamin.
