Better-Than-Tuna Salad

Ingredients
- 1 cup cooked or canned garbanzo beans (chickpeas)
- ¼ cup chopped onion
- 2 tbsp finely chopped bell pepper (red or green capsicum)
- 2 tbsp finely chopped celery
- 5-6 tbsp vegan mayonnaise
- 2 tbsp lemon juice
- ½ tsp unrefined salt
- ¼ tsp black pepper (kali mirch) powder
- 1-2 fresh sprigs of parsley, for the garnish
Method
Take the chickpeas in a mixing bowl and lightly mash them. Add the other ingredients. Mix well. Garnish with parsley and serve.
