Healthy Bhel

Ingredients

  • 3 cups puffed brown rice (murmura), roasted
  • ½ cup finely chopped onions
  • 2 medium-sized tomatoes, finely chopped
  • 2 small unpeeled cucumbers, finely chopped
  • 2 tbsp finely chopped fresh coriander
  • ¼ cup roasted unpeeled peanuts, coarsely crushed
  • 1 tbsp lemon juice / date and tamarind chutney
  • ½ tsp black salt (kala namak)
  • 2 green chillies, chopped
  • 1 tbsp chopped fresh coriander leaves, for the garnish

Method

Toss all ingredients together until everything is coated with the chutneys and seasonings. Garnish with coriander leaves and serve.
