Blueberry Pancake
Ingredients
- 1¼ cup whole wheat flour
- ⅓ cup blueberries
- 2 tsp baking powder
- ½ tsp unrefined salt
- ½ cup soy milk
Method
Mix wet and dry ingredients separately and then combine (do not over mix). Pour a ladleful of batter on a hot pan and cook until the edges are dry. Then turn over and cook until done. Repeat with the remaining batter. Serve hot.
