Cold Soup
Ingredients
- 1 cup chopped unpeeled beetroot, steamed
- ¼ cup raw chickpeas (garbanzo beans), soaked overnight and pressure cooked
- 1-2 cloves garlic
- 4-6 whole black peppercorns
- ½ cup unrefined salt
- 3 cups water
- 2-3 tbsp thick coconut milk
- 1 tbsp fresh coriander leaves, to garnish
Method
Blend all the ingredients together, except coconut milk and coriander leaves. Transfer to a serving bowl and garnish with 1 tbsp (or more according to taste) coconut milk and coriander leaves. Serve cold.
