Corn, Sprouts and Tomato Cups
Serves 4
Ingredients
- ½ cup steamed corn kernels
- 1 cup sprouted whole green moong (green gram)
- 1 onion, finely chopped
- 1 tomato, finely chopped
- 2 green chilies, finely chopped
- 1 tbsp finely chopped fresh green coriander
- ½ cup cashew cream
- Unrefined salt to taste
- 8-10 large lettuce leaves to prepare rolls or cups
- 1 tbsp mint leaves, for the garnish
Method
Place all the ingredients in a mixing bowl (except the lettuce leaves and mint) and mix well. Place in the refrigerator for an hour. When serving, use lettuce leaves as cups and place a few tablespoons of the salad mixture in the centre, garnish with mint leaves and serve.
