Jackfruit Nice Cream

Ingredients
- 1 cup ripe, chopped jackfruit
- ¼ cup seedless golden raisins, soaked in 2 tbsp warm water, until they plump up and are soft
- ¼ cup coconut milk
Method
Blend all the ingredients together and freeze in a freeze safe glass container. Place a parchment paper over the blended mixture to prevent formation of ice crystals. Once frozen, take out and thaw for a few minutes before serving.
Note
If you blend the frozen ‘nice’ cream after freezing, you will obtain a soft serve consistency. You may blend and re-freeze a couple of times to obtain a creamy and light textured ‘nice’ cream.
You may also freeze the jackfruit for a couple of days before blending, which will give you a soft serve ‘nice’ cream that can be served immediately.
Variations
Instead of golden raisins, you may use a frozen banana, to obtain a creamier ‘nice’ cream, with a milder flavour.
