Minestrone Soup
Ingredients
- 4 medium-sized tomatoes, quartered
- 1 stalk of fresh celery, chopped
- ¼ medium-sized green cabbage, roughly chopped
- 1 medium-sized onion, chopped
- 6 cloves garlic
- 1 medium unpeeled carrot, diced
- ½ medium unpeeled green zucchini, diced
- 3 cups water/vegetable stock
- ⅛ tsp dried oregano
- ⅛ tsp unrefined salt
- ⅛ tsp tabasco sauce
- 1-2 fresh parsley sprigs, to garnish
Method
Steam all vegetables together until tender. In a saucepan, take the steamed vegetables, add vegetable stock, oregano, salt and tabasco and bring the mixture to a boil. Garnish with parsley sprigs and serve piping hot.
