Mock Sour Cream/Cashew ‘Yoghurt’ Dip

Ingredients

  • 1 cup soaked cashew nuts
  • ½ cup water
  • 2 tbsp lemon juice
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ¼ tsp unrefined salt
  • 2 tbsp minced green onion
  • 2 tbsp minced carrot (optional)
  • 1 tbsp minced dill (optional)

Method

In a food processor, blend all the ingredients together except green onion, carrot and dill. When the mixture is smooth and creamy, stir in the rest of the ingredients. This is now ready to serve.
