Potato Leek Soup
Ingredients
- 1 medium-sized potato, cubed
- 1 leek stalk, chopped
- Few sprigs of celery
- 1 carrot, cubed
- 50 g pumpkin, cubed
- 1 cup vegetable stock (or more as required)
- Unrefined salt to taste
Method
In a pot, simmer potato, leek, celery, pumpkin and carrot in the vegetable stock until tender. Blend until smooth. Add salt to taste, and serve.
