Savoury Bajra Sevai Upma

Ingredients
- 1 cup bajra sevai
- 1 cup finely chopped mixed vegetables of your choice (seasonal veggies)
- Chopped onions
- 1 green chilli, slit
- 1 tsp split black gram (urad dal)
- 1 tsp split Bengal gram (chana dal)
- Unrefined salt to taste
- ¼ tsp turmeric powder (haldi)
- Chopped fresh coriander leaves
- Grated coconut to garnish
- Lime juice to taste
Method
Bring a pot of water to boil. When it comes to a boil, turn the heat off and add the bajra sevai. Leave it for 2-3 minutes and then rinse in cold water.
In a wok, sauté onions along with green chilli and the split grams. Once the onions brown, add the mixed vegetables, salt and turmeric powder and cook for a further 4-5 minutes, until the vegetables are cooked. Add the bajra sevai and more salt if needed.
Serve garnished with coriander, coconut and the lime juice sprinkled on top.
