Thai Peanut Salad
Ingredients
- 2 cups shredded white cabbage or shredded Chinese cabbage
- 1 cup grated carrots
- ½ an onion, finely sliced
- ¼ cup thinly sliced French beans
- ¼ cup chopped cherry tomatoes
- 3-4 tbsp crushed roasted peanuts
For the Dressing
- ¼ cup peanut butter
- ¼ cup water
- 2 cloves garlic, finely minced
- 2 tbsp lemon juice
- 2 tbsp soy sauce
- Unrefined salt and black pepper powder to taste
Method
Toss all the salad ingredients together in a large bowl. Keep aside.
Prepare the dressing by mixing all the ingredients together (add more water if required). Pour over the salad. Toss well and serve.
