Tofu Mayonnaise
This recipe uses no oil and no eggs. It has zero cholesterol and is high in taste.
Ingredients
- 100 g tofu (½ a packet silken tofu)
- Juice of 1 lime
- ½ a medium-sized onion
- 1-2 cloves garlic
- 1 tbsp tahini (sesame butter)
- Ground black pepper to taste
- 1 tsp unrefined salt
- 1 tsp mustard or ½ tsp mustard powder
- 1 tsp date paste
- Soy milk if needed
Method
Mix together all the ingredients (except tofu) in a blender. When blended, add tofu and blend again. Taste. Add more lemon or salt if needed and stir. If it is too thick, add 1-3 tsp of soy milk. Store in the refrigerator for no more than a week.
