Tofu Scramble

  • 300 g firm tofu
  • 3 cloves garlic, peeled and minced (1½ tbsp)
  • ½ cup minced onion
  • 3 tbsp diced red bell pepper
  • ½ cup chopped mushrooms
  • ½ tsp turmeric powder (haldi)
  • ½ tsp unrefined salt
  • ¼ tsp freshly ground black pepper
  • 1 tbsp freshly chopped parsley

Method

Drain the tofu and crumble it. Sauté (without oil) the garlic, onions and diced pepper in a sauté pan on medium heat, for about 2 minutes. Add mushrooms. Stir in the crumbled tofu first, then add turmeric powder, salt and pepper. Mix well. Turn the heat off. Garnish with parsley and serve.
